A comparative study of the implementation of organic food in school meal systems in four European countries Organic Eprints
Nielsen, Thorkild; Nölting, Benjamin; Kristensen, Niels Heine; Løes, Anne-Kristin.
Based on national reports from Denmark, Finland, Italy and Norway, describing the school meal systems and to which extent organic food is integrated there, this report identifies differences between the four countries and experiences made with organic food procurement and the dissemination of organic ingredients in school meals. Such knowledge will help to understand the possibilities and restrictions for increasing organic food in school meal systems, and to reveal the room of manoeuvre for public organic food procurement for youth in each country. In the report, similarities and differences of the national school meal systems in general are first discussed, because this context determines the scope of organic food procurement. The history and current...

Ethical principles and practice in organic processing - governance and corporate responsibility Organic Eprints
Hansen, Mette Weinreich; Nielsen, Thorkild; Kristensen, Niels Heine.
The authors emphasize the importance of reflecting values in relation to organic food production especially because both the standards for organic food processing and the value discussion are almost non-existing related to processing. There are two main claims in this paper. One claim is that there could be reluctance from the companies in discussing organic values because they fear to be associated with the organic pioneer movement and subsequently exclusion from mainstream. Another claim is that there is a need for upgrading the existing networks or maybe invite to creation of new networks around reflection on values since this issue need qualification in order to be used as an active for the companies

Farmers’ reasons for deregistering from organic farming Organic Eprints
Koesling, Matthias; Løes, Anne-Kristin; Flaten, Ola; Kristensen, Niels Heine; Hansen, Mette Weinreich.
Every year since 2002, 150 to 200 farmers in Norway have deregistered from certified organic production. The aim of this study was to get behind these figures and improve our understanding of the reasoning leading to decisions to opt out. Four cases of deregistered organic farmers with grain, sheep, dairy or vegetable production were selected for in-depth studies. The cases were analysed from the perspective of individual competencies and the competencies available in the networks of the selected organic farmers. Besides the conspicuous reasons to opt out of certified organic farming, such as regulations getting stricter over time and low income, personal reasons such as disappointment and need for acceptance were also important. This shows that hard...

Final report for 1881 Innovative Public Organic food Procurement for Youth (iPOPY) Organic Eprints
Løes, Anne-Kristin; Kristensen, Niels Heine; Mikkola, Minna; Roos, Gun; Spigarolo, Roberto; Mikkelsen, Bent Egberg; Strassner, Carola; Nölting, Benjamin.
The transnational research project iPOPY (innovative Public Organic food Procurement for Youth)has studied public food serving for young people in five European countries (Denmark, Finland,Germany, Italy and Norway), to reveal efficient strategies and policies for implementing organic food. In this way, the project would contribute to increase the consumption of organic products in Europe. Significant consumption of organic food among youth has been achieved especially in Italy, where 40 % (by weight) of the school food is organic. Public regulations demanding that municipalities should prioritize organic and otherwise certified food (local, typical, fair trade) have been very useful to establish this situation. A large consumption of organic food in...

innovative Public Organic food Procurement for Youth (iPOPY). Lessons learned from implementing organic into European school meals – policy implications. Organic Eprints
Kristensen, Niels Heine; Hansen, Mette Weinreich; Nielsen, Thorkild.
The introduction of organic food offers new dimensions to school meals, and schools offer new dimensions to organic food – when tackled properly. In this paper we present findings from the iPOPY research project that is funded by the ERA-Net, CORE-Organic-I funding body network. It is based on studies of school food policies in Denmark, Finland, Italy and Norway. The embedded food traditions and cultures have had different attention in these countries, why also food related consumption, institutions and markets are quite heterogeneous and dynamic. Whereas school food services are relatively widely embedded in the school systems in Finland and Italy, the Danish and Norwegian school food is predominantly defined by the packed lunch brought from home...

iPOPY – innovative Public Organic food Procurement for Youth. School meals – and more! Organic Eprints
Løes, Anne-Kristin; Nölting, Benjamin; Kristensen, Niels Heine; Spigarolo, Roberto; Strassner, Carola; Roos, Gun; Mikkola, Minna; Mikkelsen, Bent Egberg.
One of eight pilot projects in the European CORE Organic programme, innovative Public Organic food Procurement for Youth, (iPOPY) will study efficient ways of implementing organic food in public serving outlets for young people (2007-10). By analysing practical cases of school meal systems and other food serving outlets for youth, we will identify hindrances and promoting factors in the participating countries (Denmark, Finland, Italy and Norway). Policies, supply chains, certification systems, the young consumers’ perception and participation, and health effects of implementation of organic policies and menus are focussed in iPOPY. The main aim is to suggest efficient policies and comprehensive strategies to increase the consumption of organic food among...

Økologisk skolemad – betingelser for de økologiske leverandører Organic Eprints
Nielsen, Thorkild; Hansen , Stine Rosenlund; Hansen, Mette Weinreich; Kristensen, Niels Heine.

Organic and conventional public food procurement for youth in Denmark Organic Eprints
Hansen, Stine Rosenlund; Schmidt, Hannah W.; Nielsen, Thorkild; Kristensen, Niels Heine.
This report is the first mapping of the activities and state-of-the-art on public organic food procurement for youth. The report, on the Danish activities, comes together with similar reports from Finland, Italy and Norway. These four reports will inform a comparative analysis conducted by DTU in workpackage 2 of the iPOPY project. The major focus of the reports is school meals and the use of and potentials for organic products in this setting. But also other important settings than schools are included. The perspectives of the reports are on the policies and the policy processes influencing the extension of organic school meals. The report is produced within the project “innovative Public Organic food Procurement for Youth”, iPOPY, and will be updated...

Organic and conventional public food procurement for youth in Denmark – a national overview Organic Eprints
Hansen, Stine Rosenlund; Nielsen, Thorkild; Kristensen, Niels Heine.
This report is a mapping of the activities within public procurement of organic food for youth in Denmark, with a special focus on school meals. In Denmark, it is voluntary whether local municipalities or schools arrange school meals or not. Over time, more and more schools or municipalities choose to establish school meal systems, but these vary extensively in the way they are organized, what kind of food is served, and how they are financed. This report includes an overall mapping of the different ways of organizing school meals and their dissemination. Organic food has also been increasingly debated in relation to public procurement for children and youth. Whether the subject of organic food is discussed and implemented depends on the local values,...

Organic foods in catering – the Nordic perspective Organic Eprints
Mikkelsen, Bent Egberg; Kristensen, Niels Heine; Nielsen, Thorkild.
Catering is beginning to be an important sales channel for organic foods in the Nordic countries. However implementing organic foods in today’s complex catering systems is far from easy. Therefore primary players in the fields of marketing and promotion or organic foods in catering have established a Nordic network. The Nordic network has been able to carry out a study on the perspectives in organic foods in catering through a grant from Nordic Industrial Fund and with the support from Danish Veterinary & Food Administration and Danish Technical University. The study has resulted in this report, which is prepared on the basis of interview meetings in the five Nordic capitals. The study has been carried out in close cooperation with partners in each of...

Organic marketing initiatives and rural development - lessons learned for the organic industry Organic Eprints
Kujala, Jouni; Kristensen, Niels Heine.
Some of the determining factors for organic marketing initiatives (OMIs) success are supply policy, logistic and processing policy. Many OMIs are afraid of being dependent on one sales channel. Even though most of sales volume goes through supermarket sales, especially in Nordic countries and UK, many still want to develop their direct sales and regional sales.

Organic Marketing Initiatives in Europe Organic Eprints
Sylvander, Bertil; Kristensen, Niels Heine.
In the second half of the 20th century, agriculture in Europe has undergone profound technological change, associated with and to an extent supporting the long post-war economic boom. This process has not gone unchallenged, however; some resistance to the process has come from a growing perception of environmental (and to an extent social) degradation, and some farms and businesses, particularly in Less Favoured Areas, have been simply unable to keep up. For both groups, organic farming has much to offer, and as problems of the CAP have become more apparent such alternatives have been legitimised, and this has been bolstered by growing commitment of consumers who buy organic products to safeguard their health, or make an effective contribution to...

Sustainable friendly processing Organic Eprints
Kristensen, Niels Heine.
A comparison of the sustainability approach and the organic agriculture movement is made. Organic agriculture and processors of organic foods had the focus in developing new (innovative) production methods – sustainability strategies were more focussing on improving/adjusting already existing production technologies. Today it is more likely to find a convergence between sustainability strategies and organic strategies in organic agriculture and food processing. But basically the strategies emerge from different perspectives. In many organic food producing companies systems for ecological or sustainable management have been introduced on volunteer basis. Some private standards deal with some aspects of sustainability with regard to manufacturing of food...

The concept of 'care'in product and process development in organic food production Organic Eprints
Nielsen, Thorkild; Kristensen, Niels Heine.
Agriculture, the food industry, retail food outlets and consumers exhibit increasing interest in the organic form of production. During each of the last three years, the shift within agriculture to organic production has doubled (Kristensen & Nielsen, 1998). The concept of care plays a central role in both organic farming and subsequent processing. Organic farming organisations and the authorities have until now concentrated their efforts mainly on developing and operationalizing production criteria for primary production. However, the subsequent steps – processing and distribution – that bring the products to the consumer have not enjoyed the same attention.
